Chicken "Pasta"


There is nothing "diet feeling" about this meal! Creamy, garlic-y, cheesy, buttery sauce with mushrooms, bacon, and chicken over zoodles.

You'll need a spiralizer for your zucchini to create "noodles."


This recipe is:

✔ sugar free ✔ low carb ✔ grain & gluten free

✔ soy free

What you'll need:

Chicken

Bacon - uncured and free range if possible

Cream Cheese

2 tablespoons of parmesan cheese

Heavy Cream

Mushrooms

Garlic

Zucchini

Season to taste: Salt, Pepper, Dried Oregano

--- THAT'S IT! YAY!

Directions:

Cook your bacon on the crispy side, remove, and save for later. Season your chicken with salt, pepper, and oregano and cook in the bacon drippings. Once both sides are browned add garlic and mushrooms here. When the chicken is almost cooked all the way through, you will start your cream sauce.



In a pot, melt butter and add the cream. Reduce by half and add the cream cheese. Continue to stir to prevent scorching and combine the cream and cheese into a smooth sauce.


Add the cooked mushrooms and chicken to the sauce and let the flavors meld.


I always microwave my zoodles for about a minute so they aren't cold. Then I plate them by pouring the cream sauce, chicken, and mushrooms over the zoodles. Topping with bacon and parmesan.


You will not feel like your on any kind of diet with this meal! Yet I'm loosing weight by adding a vegetable where a starch would be. By doing this, I'm cutting out the carbohydrates and adding valuable vitamins and nutrients that would never be found in pasta. Cheers y'all!
