🎄 I used coconut flour and found them a bit dry, will use almond flour next time. I've read that adding more eggs will keep the coconut flour moist. You may want to try a couple more eggs in the batter! I'm going to try again this weekend and will let you know what 4 eggs in all does.
Recipe: 1 cup plus 2 tbsp butter, softened (or sub coconut oil) 1 1/2 cup of Stevia 2 eggs 1/4 cup plus 2 tbsp sugar free maple syrup 2 1/2 cups coconut flour (using almond meal next time) 2 1/4 tsp baking powder 1/2 tsp Himalayan sea salt 1 1/2 tbsp ground ginger 1 tbsp ground cinnamon 1 1/2 tsp ground nutmeg 1/2 tsp ground allspice
